I adore cinnamon rolls, and my friend Judy Knoles is an expert cinnamon roll maker. She graciously agreed to make a batch of her famous cinnamon rolls to celebrate the release of His Amish Sweetheart.
Cinnamon Rolls
Ingredients
- 2 T. SAF instant yeast
- 1/2 cup warm water
- 1 cup milk
- 1/2 cup vegetable oil
- 2 eggs, beaten
- 1 cup mashed potatoes (homemade or instant)
- 1/2 cup sugar
- 1 t. salt
- 3-4 cups flour
- 1/2 cup butter, softened
- 1/2 to 3/4 cup brown sugar
- 1 1/2 to 2 teaspoons cinnamon
- Icing:
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 2-4 T. milk (just enough to make the icing the desired consistency)
Instructions
- Pour yeast into bread mixer and add water, milk, oil, eggs, and mashed potatoes. Mix well.
- Continue mixing, adding salt, sugar, and just enough flour until dough pulls away from the sides of the bowl.
- Mix for 6 minutes.
- Cover and let set to rise for 45 minutes.
- Punch down and take dough out of mixing bowl. Roll into rectangle on floured surface (about half an inch thick). Spread on softened butter then sprinkle with brown sugar to desired sweetness. Sprinkle cinnamon on top. Roll rectangle up in jelly roll fashion.
- Cut lengthwise into 3/4-inch slices and put onto greased sheet pan. Let rise until doubled in size.
- Bake at 400 degrees for about 15 minutes until golden brown. Take out of oven and drizzle with powdered sugar icing while hot.
- Icing:
- Mix powdered sugar, vanilla, and milk with a hand mixer or fork. Add milk gradually, just enough for the desired consistency.
